Taco Lasagna

This delightful fusion of Mexican and Italian cuisines combines the hearty flavors of tacos with the comforting layers of lasagna. This dish features seasoned ground beef with all your favorite taco toppings: tomatoes, black beans, onions, and corn (if you want), all layered between soft tortillas and a generous amount of cheese. It’s a perfect meal for family dinners or gatherings, offering a unique twist on traditional lasagna – and tacos!- that everyone will love.

Equipment

Ingredients
 
 

  • 2 lbs ground beef
  • 1 onion diced
  • 2 Tbsp taco seasoning make your own!
  • 1 can black beans drained and rinsed
  • 1 can crushed tomatoes Not drained. Or feel free to use a small jar of salsa, or a can of diced tomatoes with peppers
  • 1 can corn optional
  • additional taco-y options: refried beans, black olives, whatever you like
  • ¼ cup sour cream
  • tortillas use corn for gluten-free
  • 2 cups shredded cheese

Instructions
 

  • Brown ground beef over medium-high heat. When almost all the way cooked through, add diced onion and stir occasionally until beef is all the way cooked through.
  • Add taco seasoning and a splash of water, stir. Reduce heat to low.
  • Add directly to the beef mixture: black beans, tomatoes (not drained), corn, any taco toppings you love and enjoy! Feel free to omit the tomatoes and/or add a small jar of salsa!
  • Turn off heat and stir in sour cream to the beef mixture.
  • Preheat oven to 375℉

Assemble

  • In a glass baking dish, start with a thin layer of the meat mixture and spread across the entire bottom of the pan.
  • Add a single layer of tortillas over top of the meat. Feel free to tear some of the tortillas to make a nice, even layer.
  • Sprinkle on some freshly shredded cheese over top the tortilla layer.
  • Repeat with the meat mixture, spreading out across the entire dish. Continue to repeat the layers one more time, just like you would when making lasagna. Adding a tortilla layer next, and then cheese.
  • Top with remaining shredded cheese.

Bake

  • Bake at 375℉ for 20 minutes.
  • Serve with additional sour cream, salsa, chopped scallions, fresh avocado or guacamole!

You really can use whatever cheese you have on hand, and it’ll still turn out great.
Freshly shredded is best, as it melts better since it doesn’t contain any anti-caking agents. But if you don’t have the desire or resources to shred your own cheese- no sweat! It’ll still turn out wonderfully.
