Easy Soft Dinner Rolls (from scratch!)
Make your own fresh bread! This yeast bread roll recipe is easy, fool-proof, and can be completed in less than two hours from start to finish! Easily mix by hand or using stand mixer.
Equipment
- Wooden spoon if not using stand mixer
- mixing bowl if not using stand mixer
- Stand mixer optional
Ingredients
- 2 Tbsp butter melted
- 1 cup water
- ½ cup milk
- 2 Tbsp honey
- 1 Tbsp yeast
- 4 cups flour AP or bread flour work equally well here
- 1 tsp salt
- melted butter optional, for brushing over top of rolls
Instructions
- In microwave-safe glass measuring cup (or saucepan) melt the butter, then add in the water, milk, and honey. Stir until combined.
- Microwave for one minute (and then in 15 second increments), or heat in saucepan until mixture reaches 115℉. It should be warm, but not hot. Best to use a thermometer as too high a temp will kill the yeast and too low won't allow it to activate.
- Pour liquid into bowl of stand mixer (if using). Sprinkle yeast over top of liquid and stir or shake the bowl a bit to wet the yeast. Let stand for 3-5 minutes until foamy and smells yeast-y.
- Add flour and salt to the liquid/yeast mixture.
- Attach dough hook to mixer and mix on low speed until combined. Once combined, mix for an additional 4-5 minutes until dough is smooth and elastic.
- Remove dough hook, cover bowl with tea towel (dampened with warm water), and let rise for about 15 minutes. Longer is fine, but if you're on a time crunch- at least 15 minutes.
- Line large baking sheet with parchment paper. Alternatively can use greased 9×13" pan.
- Gently punch down the dough and divide into 15 – 20 even sized pieces. Gently form and roll each piece into a ball and placing (seam side down) onto parchment lined baking sheet or greased 9×13" dish. Cover again with damp tea towel and let rise ~20 minutes.
- While rolls are rising, preheat oven to 400℉
- Uncover and bake for 15 minutes or until golden brown. Optional: brush tops with melted butter after removing from oven. Transfer to wire rack to cool. Serve warm or let cool!

If you don’t have a stand mixer or would rather mix by hand: stir dry ingredients into wet using wooden spoon until dough comes together. Turn out onto *lightly* floured surface and knead by hand for 6-7 minutes until smooth and elastic. Add additional pinches of flour if dough is too sticky. Follow rest of recipe as is!
Pairs great with fresh butter!
